January 6th was “Take Down Your Christmas Tree Day”. Which begs the age old question……what do you do with your live tree once it’s down? Compost it? Put it out on garbage day? Bonfire?

Didn’t know that was an option? Well, it is, according to “artisan cook” from the UK, Julia Georgallis. Julia’s new cookbook is called “How to Eat Your Christmas Tree”. And yes, it’s a very literal title. It’s full of recipes you can make using your no-longer-needed live Christmas tree.

To impress your dinner guests, you could try the Christmas-Cured Fish (it uses almost a POUND of needles for colour & flavour.)

If you’re in charge of bringing dessert to the next potluck, blue spruce & ginger ice cream is an option. And if canning & preserves are more your thing, you can attempt the Christmas Tree Pickles!
